CANNING FACTORY

Put on foundation of Drying House which was built in 1856 and
burned in October 1866.

1862 - hired outsider (Edward Collins) to set up canning operation
Did peas, succotash and plums in July; then tomatoes, corn and
beans^ finishing in Oct. 15.
In NpVember he moved his family and settled in Morrisville.

1863 - Collins running canning, also doing strawberries & currants.
He also made the cans.

1864 - Collins again plus outside help
Shaker prepared the vegetables or fruits.

Church Family continued canning until 1921.

1922 - South Family still canning tomatoes, going to Church
Family to use the equipment.

Had always done this, being allotted some days, while Church
Family would use other days.
